This is without a doubt one of the most colourful, flavourful and elevated instant noodles ever – not to mention one of the best hangover cures (guilty as charged). It was created by Luke Farrell of Speedboat Bar as a modern interpretation of the famous Thai late night drinking street food dish by Jeh O Chula restaurant. At Speedboat Bar, this is teamed with bright lights, beer towers and cracking cocktails, with delicious food and decor inspired by Bangkok’s Chinatown. What’s amazing is Luke’s relentless appreciation of the diversity of Thai food – having travelled to Thailand for many years, he discovers local ingredients, regional cooking techniques, and even plants his own Thai herbs in his greenhouse in the U.K.
